Amy's Treat Corner-Patriotic Blueberry Banana Muffins In this month's edition of Amy's Treat Corner, Amy shows us how to make some patriotic blueberry banana muffins in honor of July 4th. Yes, this video is coming out a couple weeks after July 4th, but that's only fitting in Indiana where apparently every weekend in July is technically July 4th if you're judging by the sound of fireworks. Can you tell I'm not originally from this area? :) Enjoy! Blueberry Banana Muffins Heat oven to 325 degrees 4 eggs 5 Tbsp Honey 4 Tbsp coconut oil (melted) 1 tsp vanilla or almond extract 2 Bananas (I like to heat up and mash ) **mix all these wet ingredients 1 C Almond flour 1/2 tsp baking powder 1/2 tsp cinnamon **add in dry ingredients (mixture will still be runny not thick) Grease with coc oil or flour spray or muffin liners. Fill to top and bake 8-15 mins depending on muffin size pan.

Amy's Treat Corner-Mini Lime Cheesecakes In this edition of Amy's Treat Corner Amy shows you how to make some delicious Mini Lime Cheesecakes. Here is the recipe for these delicious treats: Key Lime / Lime Cheesecakes CRUST: 1 1/2 C Almonds 10-12 Dates soaked in warm water for 10 mins FILLING: 2 1/2 C Cashews soaked in cold water overnight 1/2 C coconut milk 1/4 C coconut oil 1/2 C Honey 3 limes or 6 key limes juiced and zested **prepare the crust in the blender and place a spoon full in a cupcake liner of a muffin tin. Press down firmly to cover bottom and a little of the sides.  Place in freezer while you make the filling. **for the filling-put all ingredients into blender until the mixture is creamy.  Depending on your blender this could take around 3-4 minutes (the creamier the better) **pour filling on top of crusts and put back in freezer for at least 30mins Options- I sprinkled with date sugar in the video Trying adding lemon juice or bananas ---Experiment, have fun and enjoy :)---

Check out the 90 second preview here: https://youtu.be/ZJKTUJw8Rxo Here are the recipes: ------Banana Breakfast shake----- 1 Frozen banana - partially thawed 1 C coconut milk or almond milk 2-3 dates 1 Tbsp cocoa 1 Tbsp Maple syrup 4-5 ice cubes Add ins: 2 Tbsp Peanut butter, almond butter, sunbutter 1 scoop protein powder * put all in blender and enjoy :) ------ Banana ice cream------ 4 Partially frozen bananas pretty ripe 1/2 C coconut cream 1/2 tsp cinnamon 1 tsp vanilla Optional vanilla bean * put in blender and place in container then cover ice cream with plastic wrap * put in freezer till frozen and enjoy   Bananas Foster Sauce 2 Tbsp unsalted butter 2 Tbsp coconut sugar 2 Tbsp coconut cream (make sure it's just the cream and not the liquid) In a sauce pan melt the butter and sugar. Add the cream and stir till hot and bubbly. Pour in jar and put in fridge! * I made a double batch *

Sweet Potato/Avocado Brownies:
  1. 1/2 Avocado
  2. 4 ounces peeled sweet potato
  3. 1 cup almond meal
  4. 7 tbsp raw cacao powder
  5. 10 tbsp melted coconut oil
  6. 6 tbsp honey
  7. 4 eggs
  8. 1 ½ tsp pure vanilla extract
Take 4oz sweet pot and microwave till soft- let cool - then peel and mash with avocado
In large bowl beat the eggs and honey
Add the coconut oil and vanilla
Add in sweet pot and avocado
Add in almond meal, cacao powder
Stir in 1/2 choc chips if desired !
Line an 8x8 pan with parchment paper and bake at 350 for 20-25 mins! DO NOT OVERBAKE :)
Frosting:
2 sticks softened unsalted butter -WHIP WHIP FOR ABOUT 5-7 mins stirring after every minute
1 C organic powder sugar
1/2 C coconut milk
